Tonkatsu, a kind of japanese deep fried pork cutlet, made of either fillet or loin. It is often served with shredded cabbage. At Maisen, they are specially known for the Kurobuta (かごしま黒豚), or black pig, a rare breed of Berkshire pig bred in the Kagoshima Prefecture. Rich in intramuscular marbled fat, the Kurobuta is distinguished from most commercial pork by its sweetness and juicy flavor. On the menu, look for Okita Kurobuta Fried Pork Loin , costs around 37USD. It is only served at a limited number every day, so it is highly advisable to go there early to avoid disappointment.
We got there at about 4pm and it was already sold out, so we went for the next best pork loin available. Despite that, the fabulous concoction of tender texture and rich flavor coated with fresh, crispy breadcrumbs made a greatly satisfying meal.
